Pooran Poli (Sweet Flat Bread)

Puran poli is a classical Marathi dish. It is a dessert served during important festivals such as Holi, Padwa in Maharashtra. The stuffing is known as pooran and the outer cover is known as poli.


Chana dal - 1 cup
Jaggery (Gur)  - 1 cup
Green cardamom powder (chhoti elaichi) - 1/2 tsp
Maida - 1 cup
Rice flour - 1 tsp
Sooji (semolina) -1 tsp
Salt - a pinch
Ghee - 1-2 tbsp


  • Boil chana dal. Drain out all water when chana dal is well cooked and soft.

  • Grind boiled chana dal in a food processor.

  • Break jaggery into small pieces.

  • Cook chana dal and jaggery together in a saucepan till it forms a smooth and soft mixture. Flavor the pooran with green cardamom powder.

  • For poli, make a soft dough by mixing maida, rice flour, sooji, salt, oil and little water.

  • Divide pooran into equal parts. Stuff the dough balls with pooran, roll it flat into a paratha  with help of a rolling pin or place the stuffed dough balls between two plastic sheets and press it with palms . Cook Poli on tawa by applying ghee  until both sides are evenly golden brown.

Makes: 4-5 pooran polis
