Mushroom Fry


Mushrooms quartered – 12-15
Onions – 1, medium
Ginger & Garlic paste – 1/2 tbsp
Tomato, chopped- 1 medium
Green chillies, finely chopped (optional) – 2
Capsicum, diced – 1, small
Coriander seeds – 1 tbsp
Dry red chilli – 2
Black pepper – 6-7
Cumin seeds – 3/4 tbsp
Garam masala  powder- few pinches
Dried fenugreek leaves – 1 tbsp
Ginger cut into julienne
Salt as per taste


  • Heat a pan and dry roast coriander seeds, cumin, dry red chilies and black peppers until you get a nice aroma. Grind it into a coarse powder. Dry roast fenugreek leaves slightly and keep aside (Don’t let the color of leaves change).
  • Wash quartered mushrooms and place them in hot water for 3-4 minutes. Keep the mushrooms aside.
  • Heat 2 tbsp of oil in kadai. Add sliced onions, green chillies and ginger-garlic paste. Saute for 3-4 minutes.
  • Add diced capsicums and crushed fenugreek leaves. Saute for 2-3 minutes.
  • Add roasted and grounded spice powder. Saute for few seconds. Add chopped tomatoes and salt. Saute till tomatoes are cooked.
  • Add and toss quartered mushrooms. Sprinkle some garam masala in the end.
  • Serve hot and garnish with ginger juliennes.
