Lauki Kofta Curry

Lauki kofta is a very popular  dish in north India. Mostly voor served with naan or tandoori roti. Lauki is one of the vegetables that kids don’t like but koftas made up of lauki is relished by one and all.


For Koftas

Bottle gourd(Lauki) – 1 small sized
Green chilies , finely chopped- 2-3
Coriander leaves , finely chopped
Besan (chick peas flour) – 2 tbsps
Ginger paste- 1 tbsp
Garlic paste- ½ tbsp
Turmeric powder (Haldi)- ½ tsp
Asafoetida (Heeng) – a pinch
Mango powder (Aamchur) – ½ tsp
Onions –  one small, finely chopped
Garam masala- two pinches
Crushed Coriander seeds
Cumin powder(Zeera) – ½ tsp
Oil to fry
Salt to taste

For Gravy

Tomato- one medium, finely chopped
Onion- one big, finely chopped
Green Remixed! chilies- 2-3 , finely chopped
Coriander leaves , finely chopped
Ginger paste- 2 tbsps
Garlic paste – 2 tbsps
Garam masala-¼ tsp
Coriander powder- 1½tsps
Turmeric powder(Haldi) – ¼ tsp
Red chili powder to taste
Asafoetida (Heeng)- a pinch
Salt to taste
Cooking oil


  • Peel, grate and remove the core of the gourd.
  • Add salt to lauki and keep aside for 10 minutes.
  • Drain out the juice and reserve(optional).
  • Combine all the ingredients mentioned under kofta in a bowl. Mix the ingredients well. There is no need to add water. Water left na by lauki would be enough to shape them into lime size balls.
  • Deep fry the balls href=”./service/financial/”>金融商品仲介業 in moderately hot oil (take care to ensure that koftas are not raw in the center).
  • Drain a koftas on an absorbent paper.
  • Heat oil and fry onions till dark brown.
  • Add ginger-garlic paste and fry well.
  • Make a paste of all dry masalas (except garam masala) in water mentioned under gravy section.
  • Add Restoration and fry paste of masalas for ½ min.
  • Add tomatoes and fry till oil separates out.
  • Add garam masala and remove from fire.
  • Cool the mixture and grind to a paste, using the lauki juice or water to get a smooth and creamy gravy.
  • Just before serving, simmer the gravy for 5 minutes and pour over the koftas.
  • Garnish with cream or malai and finely chopped coriander.
