Kela Malpua (Indian Banana Pancake)


Maida – ½ cup
Banana (kela) – 1 big, mashed well
Sooji (Semolina) – 3-4 tbsps
Fennel seeds (Saunf) – 1 tbsp, crushed
Raisins (Kishmish) – 3-4 tsps
Salt – a pinch
Milk – enough for making thick batter
Saffron (Kesar) – few strands
Sodium bicarbonate – a pinch
Sugar as per taste
Oil for frying



  • Mash banana in a bowl properly.
  • Add all the remaining  ingredients and add make a free flowing batter (not very thick and not very thin) using minimum amount of milk. Beat vigorously for smooth batter. Leave the batter for an hour.
  • Heat oil in a kadhai. To check the right temperature of the oil, pour a drop of the batter in the oil, the batter should sizzle and come up after some time.
  • Pour a small ladle full of prepared batter into oil in circular fashion. The batter should immediately sizzle and come up after some time.
  • Deep fry puas till they turn golden brown on both sides. Take the help of  another laddle in turning the sides of malpuas as banana malpuas are very soft so you might face some difficulty in turning their sides . Drain the fried banana malpuas on absorbent paper. Repeat the same process with remaining batter.
  • Garnish the puas with chopped pistachios and coconut powder.
  • Serve them warm.

You can dip these banana  malpuas in single thread sugar syrup too. But then you will have to cut down the sugar amount  in the batter.
