Gatte Ki Sabji

Gatte ki sabji is a traditional Rajasthani dish. It goes well with baati, rice, or chappati.


For gatte

Gram flour (Besan) – 1 cup
Red chilli powder – 1 tsp
Turmeric (Haldi) – 1 tsp
Asafoetida (Heeng) – a pinch
Coriander powder (Dhania)- 1 tsp
Carom seeds (Ajwain) –  ½ tsp
Ginger paste – 1 tsp
Garlic paste – 1 tsp
Mustard oil – 1 tbsp
Salt to taste

For gravy

Dry  red chilli – 2
Onion- one big, finely chopped
Green chilies- 2-3 , finely chopped
Coriander leaves , finely chopped
Ginger paste- 2 tbsps
Garlic paste – 2 tbsps
Garam masala-¼ tsp
Cumin powder (Zeera) – ½tsp
Coriander powder (Dhania)- 1½tsps
Turmeric powder – ¼ tsp
Red chili powder to taste
Curd – 1-2 tbsp
Salt to taste
Oil for cooking


  • Mix together all the ingredients and bind them in a little soft dough.
  • Make thin and long strips of the dough.
  • Put them into boiling water and allow them to cook for at least 5 minutes or till the gattas start floating on water.
  • Don’t throw away the water in which gattas were boiled as it will be needed for gravy.
  • Now take out the gattas strips out of boiling water  and after cooling them cut them into small pieces and fry till they are golden brown.
  • Now keep the gattas aside.
  • Heat oil in a kadhai.
  • Add dry red chilli and green chillies.
  • Add chopped onions till they are golden brown.
  • Add ginger and garlic paste, fry well.
  • Add turmeric, coriander powder and zeera powder.
  • Add beaten curd and mix well.
  • Add gattas and the water in which the gattas were boiled.
  • Add garam masala and simmer for 5 minutes.

Serves/Makes:  3-4
