Besan Bhindi Fry (Fried Okra with Gram Flour)

Ingredients:

Bhindi (okara/Lady’s Finger) 20, medium  or small sized
Onion – 1, medium sized , cut in big square pieces
Besan (Gram flour) 1/4 cup
Garam masala – 1/4 tbsp
Roasted zeera (cumin) powder – 1.5 tbsp
Haldi (Turmeric)- 1/4 tbsp
Mango powder – 1/2 tbsp
Fennel powder (Saunf) – 1.5 tbsp
Dhania (coriander powder) – 1 tbsp
Kalonji (Onion seeds) – 1/2 tsp
Red chili powder as per taste
Salt to taste
Cooking oil

Directions:

  • Wash and dry bhindi properly otherwise it would become sticky while frying.
  • Split bhindi  lengthwise but keep one end intact.
  • Stuff all the  bhindi with masala. Sprinkle the remaining masala all over the bhindi and add a  table spoon of oil. Mix well.
  • Heat oil in a frying pan. Add kalonji  seeds and onions. Saute for few minutes.
  • Add besan and saute for few minutes.
  • Add all stuffed bhindi in the pan. Cover the pan and cook bhindi at very low flame.
  • Stir occasionally till bhindi is completely cooked.
  • Serve hot with roti and fried dal.
