Banana Muffins

Ingredients:

All purpose flour (Maida) – 1.5 cups
Ripe banana – 1 cup
Salt – 1/4 tsp
Baking soda – 1.5 tsp
Cinnamon powder – 1/8 tsp
Sugar, powdered – 3/4 cup -1 cup
Oil – 1/2 cup
Milk – 1/4 cup
Egg – 1
Vanilla essence – 1/2 tsp
Chocolate chips – optional
Walnuts, chopped – optional

Directions:

  • Pre-heat oven or microwave oven (use convection mode) at 180 degree Celsius.
  • Grease  your muffin tray properly.
  • Combine all the dry ingredients in a bowl except sugar and sieve three times to ensure proper mixing.
  • Combine sugar, oil, milk, egg, diced bananas and vanilla essence in another bowl and whisk them for a minute.
  • Add dry ingredients slowly to wet ingredients and mix the batter gently and constantly.
  • Mix the batter for 1-2 minutes with the hand blender.
  • Fold in walnuts(chopped), chocolate chips in the batter.
  • Pour the batter into the greased muffin tray.
  • Bake muffins at 180 degree Celsius for 20-30 minutes or until the inserted toothpick comes out clean from the center of the muffins.
  • Cool  banana muffins at room temperature.
