Aloo - Baigan Ka Bharta (Spicy Mashed Brinjal and Potatoes)

Aloo - baigan ka bharta is  a mouth watering side dish which is relished in Bihar along-side authentic Bihari cuisine "litti' (more on this later). Bharta has a wonderful aroma associated with the roasted baigan. While you can go about executing this recipe without using potatoes, but I personally like to add potato, which improves its consistency and the final product becomes palatable to even those who are not very fond of baigan or baingan.


Baigan or brinjal or eggplant: one medium

Potatoes: one small, boiled, peeled and mashed

Onions: one medium sized , finely chopped

Ginger paste: 1 tbsp

Garlic paste: 1 tbsp

Turmeric powder (Haldi): ½ tsp

Red chili powder: ½ tsp

Garam masala: ½ tsp

Salt as per taste

Green chilies: 3-4, finely chopped

Coriander leaves for garnishing

Cooking oil



Serves/Makes:  3-4
