Baigan Ka Bharta (Spicy Mashed Brinjal)



Baigan or brinjal or eggplant: one medium
Onions – 2 medium, finely chopped
Tomato – 1 medium, finely chopped
Green chillies – 2-3, chopped
Garlic cloves – 7-8
Mustard oil


  • Wash eggplants and wipe them with dry cloth.
  • Make slits on either side of the eggplants with the help of knife.
  • Peel garlic and insert them in the slits of the eggplant.
  • Brush little mustard oil all over the brinjal.
  • Roast brinjals on the gas burner on medium heat, till they are fully cooked. Keep turning eggplants in order to ensure full roasting.
  • Cool eggplants and peel off the blackened skin. Mash the flesh of eggplants along with garlic cloves and 1 tsp of mustard oil.
  • Add finely chopped onions, green chilies, tomatoes  and salt to the mashed eggplants.
