Aloo Bonda
Ingredients:
Potatoes: 2 medium sized, boiled, peeled and mashed
Onions: ½ cup, finely chopped
Green chilies: 2 tsps
Coriander leaves: 3-4 tsps, finely chopped
Curry leaves: 1-2 tsp, finely chopped
Ground nuts or cashew nuts – 5-6, broken
Mustard seeds – 1 tsp
Turmeric powder (Haldi): ½ tsp
Gram flour (Besan): ½ cup
Asafoetida (Heeng) – ½ tsp
Carom seeds (Ajwain) – 1 tsp
Red chili powder – ½ tsp
Lime juice
Salt to taste
Cooking oil
Directions:
- Heat oil in a pan.
- Add mustard seeds and let it crackle.
- Fry green chilies, chopped coriander and curry leaves.
- Add nuts and let it roast.
- Add turmeric and heeng.
- Add chopped onions and fry till it is pink.
- Add mashed potatoes and fry till the mixture is free of any moisture.
- Add salt and lime juice as per taste and let the mixture cool at room temperature.
- Make lime sized balls out of the potato mixture and keep it aside.
- Make a thick batter of besan, salt, red chili powder , ajwain. Add ¼ tsp of oil to the batter.
- Dip each ball in batter and deep fry them till golden brown.
- Serve aloo bonda with chutney.
